Traditional Natural Processing

Our sun-drying method preserves natural sweetness:

1. Floatation Selection

   • Cherries immersed in water tanks

   • Sinkers (ripe cherries) selected for processing

   • Floaters (immature cherries) removed

2. Sun Drying Process

   • Ripe cherries spread on raised drying beds

   • 15-25 days natural sun drying

   • Regular turning for even drying

   • Moisture reduction to 11-12%

3. Quality Control

   • Protected drying under shade nets

   • Nighttime covering to prevent moisture absorption

   • Constant moisture monitoring

4. Final Preparation

   • Dry milling to remove husks

   • Density sorting and color sorting

   • Hand sorting for final selection
